Boston Cream Pie

Ingredients

  • 2 eggs, separated
  • 1 cup flour
  • 1½ teaspoons baking powder
  • ¾ cup sugar
  • 1/8 teaspoon salt
  • ½ cup boiling milk
  • ½ teaspoon vanilla extract
  • 2 tablespoons cornstarch
  • 1 cup scalded milk
  • 1 teaspoon butter
  • powdered sugar for dusting

Method

  1. 1 Preheat oven to 350°F. Sift together flour, baking powder, sugar, and salt.
  2. 2 Beat egg yolks, then fold in stiffly beaten egg whites. Gradually add dry ingredients and boiling milk, stirring in vanilla.
  3. 3 Pour batter into a deep layer cake tin and bake for 35 minutes until golden. Cool completely.
  4. 4 Whisk sugar, cornstarch, salt, and eggs. Gradually stir in scalded milk.
  5. 5 Cook mixture in a double boiler, stirring constantly, until thick and smooth. Remove from heat and stir in butter and vanilla.
  6. 6 Cool filling slightly, split cake horizontally, spread filling between layers, and dust top with powdered sugar.
