Boston Cream Pie
Ingredients
- 2 eggs, separated
- 1 cup flour
- 1½ teaspoons baking powder
- ¾ cup sugar
- 1/8 teaspoon salt
- ½ cup boiling milk
- ½ teaspoon vanilla extract
- 2 tablespoons cornstarch
- 1 cup scalded milk
- 1 teaspoon butter
- powdered sugar for dusting
Method
- 1 Preheat oven to 350°F. Sift together flour, baking powder, sugar, and salt.
- 2 Beat egg yolks, then fold in stiffly beaten egg whites. Gradually add dry ingredients and boiling milk, stirring in vanilla.
- 3 Pour batter into a deep layer cake tin and bake for 35 minutes until golden. Cool completely.
- 4 Whisk sugar, cornstarch, salt, and eggs. Gradually stir in scalded milk.
- 5 Cook mixture in a double boiler, stirring constantly, until thick and smooth. Remove from heat and stir in butter and vanilla.
- 6 Cool filling slightly, split cake horizontally, spread filling between layers, and dust top with powdered sugar.
