Bone-In Roasted Pork Loin With Herbs

Ingredients

  • 1 pork shoulder bone-in
  • 1 lb pork belly
  • 2 cups fresh aromatic herbs (parsley, sage, etc.)
  • 1 tsp saffron threads
  • 1 tsp mixed spices (pepper, cinnamon, etc.)
  • 1 cup fresh grated cheese (Pecorino or Parmesan)
  • 2 large eggs
  • 1 sheet pork fat netting (or lamb intestine casing)

Method

  1. 1 Remove meat from the pork shoulder bone. Chop the shoulder meat and pork belly finely together, pounding them with a knife on a board until well combined.
  2. 2 Crush the fresh herbs. Mix the herbs, spices, and saffron into the meat mixture. Stir in the grated cheese and beaten eggs until the mixture is moist but not runny.
  3. 3 Lay the pork fat netting flat. Spread half the meat mixture onto the netting. Place the cleaned shoulder bone in the center.
  4. 4 Cover the bone with the remaining meat mixture, ensuring the bone is fully encased. Wrap the netting tightly around the entire roast.
  5. 5 Roast over an open fire or in a 350°F oven until the meat is cooked through and browned. Serve hot.
