Boiling Water Sponge Cake
Ingredients
- 7 large eggs
- ¾ lb (340g) granulated sugar
- ¼ cup (60ml) boiling water
- ½ cup (60g) all-purpose flour, well dried
Method
- 1 Separate 3 egg whites from the yolks. Beat the 4 yolks and 3 whole eggs vigorously with a whisk until pale and thick.
- 2 Beat the sugar until fine, then add the boiling water. Pour this hot syrup into the eggs while beating continuously for 30 minutes or more until thick and ribbon-like.
- 3 Just before baking, gently fold in the dried flour. Do not beat after adding flour to avoid making the cake heavy.
- 4 Line a cake tin with parchment paper. Pour in the batter and bake in a quick oven (425°F) for 1 hour.
