Boiling Water Fruit Cake With Boiled Frosting

Ingredients

  • 1 cup boiling water
  • 1 cup sugar
  • 1/2 cup Crisco
  • 1 egg
  • 1/4 cup chopped candied citron peel
  • 1 cup sultana raisins
  • 2 1/2 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/4 teaspoon grated nutmeg
  • 1/2 teaspoon lemon extract
  • Boiled frosting, for topping

Method

  1. 1 In a basin, combine Crisco and sugar, then pour boiling water over them; let cool completely.
  2. 2 Add the well-beaten egg to the cooled mixture.
  3. 3 Sift in flour, salt, baking powder, and nutmeg, then mix well.
  4. 4 Stir in the candied citron peel, raisins, and lemon extract.
  5. 5 Turn the batter into a greased and floured small square tin.
  6. 6 Bake in a 350°F oven for 30 minutes.
  7. 7 Cool the cake completely, then cover with boiled frosting.
