Boiling Water Fruit Cake With Boiled Frosting
Ingredients
- 1 cup boiling water
- 1 cup sugar
- 1/2 cup Crisco
- 1 egg
- 1/4 cup chopped candied citron peel
- 1 cup sultana raisins
- 2 1/2 cups flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/4 teaspoon grated nutmeg
- 1/2 teaspoon lemon extract
- Boiled frosting, for topping
Method
- 1 In a basin, combine Crisco and sugar, then pour boiling water over them; let cool completely.
- 2 Add the well-beaten egg to the cooled mixture.
- 3 Sift in flour, salt, baking powder, and nutmeg, then mix well.
- 4 Stir in the candied citron peel, raisins, and lemon extract.
- 5 Turn the batter into a greased and floured small square tin.
- 6 Bake in a 350°F oven for 30 minutes.
- 7 Cool the cake completely, then cover with boiled frosting.
