Boiling Water Cornmeal Batter Bread

Ingredients

  • 3 tbsp shortening
  • 1 ½ cups cornmeal
  • 2 ½ cups boiling water
  • 1 ½ cups sour milk or water
  • 1 cup flour
  • 1 tsp salt
  • 2 tbsp baking powder
  • 4 tbsp syrup or sugar
  • 1 egg

Method

  1. 1 Place shortening and cornmeal in a mixing bowl.
  2. 2 Pour boiling water over the mixture.
  3. 3 Add sour milk, flour, salt, baking powder, syrup, and egg. Beat to mix.
  4. 4 Pour into a well-greased baking dish.
  5. 5 Bake in a hot oven (425°F) for 40 minutes.
