Boiled Whole Lemon Almond Cake
Ingredients
- 1 large lemon
- 6 oz sugar
- 6 oz sweet almonds
- 3 bitter almonds
- 6 eggs, separated
Method
- 1 Boil the whole lemon in water for 2 hours. If it tastes bitter, soak in cold water until the bitterness is gone. Dry and rub the lemon through a sieve.
- 2 Skin and grind the sweet and bitter almonds very finely. Add the ground almonds, sugar, and egg yolks to the sieved lemon. Mix well.
- 3 Beat the egg whites until stiff. Gently fold them into the lemon mixture. Pour into a mold and bake in a moderate oven (350°F) until set.
