Boiled Whole Lemon Almond Cake

Ingredients

  • 1 large lemon
  • 6 oz sugar
  • 6 oz sweet almonds
  • 3 bitter almonds
  • 6 eggs, separated

Method

  1. 1 Boil the whole lemon in water for 2 hours. If it tastes bitter, soak in cold water until the bitterness is gone. Dry and rub the lemon through a sieve.
  2. 2 Skin and grind the sweet and bitter almonds very finely. Add the ground almonds, sugar, and egg yolks to the sieved lemon. Mix well.
  3. 3 Beat the egg whites until stiff. Gently fold them into the lemon mixture. Pour into a mold and bake in a moderate oven (350°F) until set.
