Boiled White Beans With Butter And Pepper

  • 1 lb small white beans
  • Cold water
  • Small pinch baking soda
  • Hot water
  • Salt
  • Butter
  • Pepper

Method

  1. 1 Place beans in a saucepan with cold water to cover and a small pinch of baking soda. Simmer for a few minutes, then drain.
  2. 2 Replace water with hot water and a little salt. Cook gently until tender, avoiding a hard boil.
  3. 3 Drain the beans thoroughly. Serve with a liberal piece of butter and a dust of pepper.
