Boiled White Beans With Butter And Pepper
Ingredients
- 1 lb small white beans
- Cold water
- Small pinch baking soda
- Hot water
- Salt
- Butter
- Pepper
Method
- 1 Place beans in a saucepan with cold water to cover and a small pinch of baking soda. Simmer for a few minutes, then drain.
- 2 Replace water with hot water and a little salt. Cook gently until tender, avoiding a hard boil.
- 3 Drain the beans thoroughly. Serve with a liberal piece of butter and a dust of pepper.
