Boiled Strawberry Preserves

Ingredients

  • 2 qt strawberries
  • 1/2 c hot water
  • 1 lb sugar

Method

  1. 1 Clean strawberries in a colander by dipping in water, remove hulls, and drain thoroughly.
  2. 2 Combine hot water and sugar in a preserving kettle, stirring until dissolved, then bring to a rapid boil.
  3. 3 Add strawberries to the boiling syrup and boil for 10-12 minutes until tender.
  4. 4 Fill hot sterilized jars immediately with the hot preserve, cool, seal with paraffin, and label.
