Boiled Strawberry Preserves
Ingredients
- 2 qt strawberries
- 1/2 c hot water
- 1 lb sugar
Method
- 1 Clean strawberries in a colander by dipping in water, remove hulls, and drain thoroughly.
- 2 Combine hot water and sugar in a preserving kettle, stirring until dissolved, then bring to a rapid boil.
- 3 Add strawberries to the boiling syrup and boil for 10-12 minutes until tender.
- 4 Fill hot sterilized jars immediately with the hot preserve, cool, seal with paraffin, and label.
