Boiled Spinach With Hard Boiled Eggs

Ingredients

  • Spinach
  • ½ cup boiling water
  • Salt
  • Pepper
  • Hard boiled eggs, sliced

Method

  1. 1 Pick over and wash spinach thoroughly in several waters to remove all sand.
  2. 2 Place spinach in a kettle with a very little boiling water (about ½ cup). Note: Young spinach may not need added water.
  3. 3 Boil until tender, approximately 25 minutes.
  4. 4 Drain thoroughly, chop fine, and drain again.
  5. 5 Season with salt and pepper. Garnish with slices of hard-boiled eggs.
