Boiled Spinach With Butter And Eggs
Ingredients
- 1 bunch spinach
- ¼ teaspoon baking soda
- 2 tablespoons butter, creamed
- Salt to taste
- Pepper to taste
- 2 hard-boiled eggs, sliced
Method
- 1 Wash spinach thoroughly and place in cold water. Bring to a boil.
- 2 Add baking soda and boil for 5 minutes. Drain in a colander and rinse with cold water.
- 3 Squeeze out excess water using a spoon, then chop the spinach very finely.
- 4 Mix in creamed butter, salt, and pepper. Heat thoroughly and serve topped with sliced hard-boiled eggs.
