Boiled Salmon With Wine Anchovy Butter Sauce
Ingredients
- 1 large piece salmon
- Salted and acidulated water
- Herbs and spice
- 2 cupfuls cooking liquid
- ¼ cup white wine
- 2 anchovies
- 1 tbsp butter
Method
- 1 Boil salmon in salted, acidulated water with herbs and spice. Drain and keep warm.
- 2 Add 2 cupfuls of cooking liquid, ¼ cup white wine, and 2 anchovies rubbed to a paste to a saucepan.
- 3 Boil for 15 minutes, then whisk in 1 tbsp butter in small bits.
- 4 Serve the sauce separately over the salmon.
