Boiled Salmon With Wine Anchovy Butter Sauce

Ingredients

  • 1 large piece salmon
  • Salted and acidulated water
  • Herbs and spice
  • 2 cupfuls cooking liquid
  • ¼ cup white wine
  • 2 anchovies
  • 1 tbsp butter

Method

  1. 1 Boil salmon in salted, acidulated water with herbs and spice. Drain and keep warm.
  2. 2 Add 2 cupfuls of cooking liquid, ¼ cup white wine, and 2 anchovies rubbed to a paste to a saucepan.
  3. 3 Boil for 15 minutes, then whisk in 1 tbsp butter in small bits.
  4. 4 Serve the sauce separately over the salmon.
