Boiled Rice Pudding With Almonds And Wine Sauce
Ingredients
- 3 oz rice flour
- 3/4 pint milk
- 3 oz butter
- 3/4 cup cream
- lump sugar to taste
- 5 eggs
- 2 egg whites
- peel of 1/2 lemon, grated
- 3 oz blanched almonds, chopped
- a few bitter almonds, chopped
- wine sauce for serving
Method
- 1 Cook rice flour in milk over heat, stirring constantly until stiff.
- 2 Remove from heat, transfer to a pan, and stir in butter and cream.
- 3 Sweeten with sugar to taste and let cool completely.
- 4 Beat eggs and whites, then mix in lemon peel and chopped almonds.
- 5 Combine egg mixture with rice, pour into small basins, and boil for 30 minutes.
- 6 Serve with wine sauce.
