Boiled Rice Pudding With Almonds And Wine Sauce

Ingredients

  • 3 oz rice flour
  • 3/4 pint milk
  • 3 oz butter
  • 3/4 cup cream
  • lump sugar to taste
  • 5 eggs
  • 2 egg whites
  • peel of 1/2 lemon, grated
  • 3 oz blanched almonds, chopped
  • a few bitter almonds, chopped
  • wine sauce for serving

Method

  1. 1 Cook rice flour in milk over heat, stirring constantly until stiff.
  2. 2 Remove from heat, transfer to a pan, and stir in butter and cream.
  3. 3 Sweeten with sugar to taste and let cool completely.
  4. 4 Beat eggs and whites, then mix in lemon peel and chopped almonds.
  5. 5 Combine egg mixture with rice, pour into small basins, and boil for 30 minutes.
  6. 6 Serve with wine sauce.
