Boiled Potatoes With Butter And Chives
Ingredients
- potatoes of uniform size
- cold water
- salt
- butter (optional)
- pepper (optional)
- minced chives or parsley (optional)
Method
- 1 Peel potatoes and soak in cold water for 30 minutes. Alternatively, leave unpeeled and soak in cold salted water for 30 minutes.
- 2 Cover potatoes with boiling salted water and cook until tender but not broken.
- 3 Drain thoroughly and keep hot, uncovered, until dry and mealy.
- 4 Season with salt, pepper, and butter if desired. Garnish with minced chives or parsley.
