  • cold water
  • salt
  • butter (optional)
  • pepper (optional)
  • minced chives or parsley (optional)

Method

  1. 1 Peel potatoes and soak in cold water for 30 minutes. Alternatively, leave unpeeled and soak in cold salted water for 30 minutes.
  2. 2 Cover potatoes with boiling salted water and cook until tender but not broken.
  3. 3 Drain thoroughly and keep hot, uncovered, until dry and mealy.
