Boiled Potato Dumplings With Apples
Ingredients
- mealy potatoes, peeled
- water
- 1 quart flour
- apples or other fruit for filling
- butter, sugar, and nutmeg for serving
Method
- 1 Boil peeled potatoes until very soft. While hot, rub them through a sieve into a stew pan.
- 2 Add enough water to the potatoes to create a thick mush consistency.
- 3 Sift the flour and knead it into the potato mush until the dough is light and smooth.
- 4 Roll the dough thin, fill small portions with apples or fruit, and tie securely in thick cloths.
- 5 Boil the dumplings until cooked through. Serve with butter, sugar, and nutmeg.
