Boiled Potato And Artichoke Salad
Ingredients
- 2 medium potatoes, boiled and sliced
- 2 medium artichoke hearts, boiled and sliced
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 tbsp vinegar
Method
- 1 Boil potatoes and artichoke hearts separately until tender. Drain and let cool slightly.
- 2 Slice the boiled potatoes and artichoke hearts into uniform pieces.
- 3 Combine the sliced vegetables in a bowl. Season with salt and pepper.
- 4 Drizzle with olive oil and vinegar. Toss gently to coat evenly.
- 5 Serve immediately with wholemeal bread.
