Ingredients

  • 2 medium potatoes, boiled and sliced
  • 2 medium artichoke hearts, boiled and sliced
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 tbsp vinegar

Method

  1. 1 Boil potatoes and artichoke hearts separately until tender. Drain and let cool slightly.
  2. 2 Slice the boiled potatoes and artichoke hearts into uniform pieces.
  3. 3 Combine the sliced vegetables in a bowl. Season with salt and pepper.
  4. 4 Drizzle with olive oil and vinegar. Toss gently to coat evenly.
  5. 5 Serve immediately with wholemeal bread.
