Boiled Pippin Apple Preserves

Ingredients

  • 1 pint clear spring water
  • 1 lb double-refined sugar
  • 1 lb pippin apples

Method

  1. 1 Combine water and sugar in a pot and bring to a boil.
  2. 2 Peel apples, remove stalks and eyes, then add to the syrup.
  3. 3 Cover tightly and boil rapidly for 15 minutes.
  4. 4 Remove from heat to cool slightly, then return to boil rapidly for the same duration.
  5. 5 Repeat the boil-and-cool cycle 3-4 times until apples are translucent, then cover to cool completely.
