Boiled Pippin Apple Preserves
Ingredients
- 1 pint clear spring water
- 1 lb double-refined sugar
- 1 lb pippin apples
Method
- 1 Combine water and sugar in a pot and bring to a boil.
- 2 Peel apples, remove stalks and eyes, then add to the syrup.
- 3 Cover tightly and boil rapidly for 15 minutes.
- 4 Remove from heat to cool slightly, then return to boil rapidly for the same duration.
- 5 Repeat the boil-and-cool cycle 3-4 times until apples are translucent, then cover to cool completely.
