Boiled Pike With Lemon Egg Sauce
Ingredients
- 1 large pike, cleaned and scaled
- 1 cup white wine
- 1 cup water
- Lemon peel
- 1 handful salt
- Fried bread bits
- Melted butter
- 2 slices lemon
- 3 egg yolks
- Grated nutmeg
Method
- 1 Wash, clean, and scale the pike, then cut it into three pieces.
- 2 Boil white wine, water, and lemon peel. Add the pike and a handful of salt, then boil until cooked through.
- 3 Place the cooked pike on sippets and garnish with bits of fried bread.
- 4 Melt butter, add lemon slices, egg yolks, and grated nutmeg to create the sauce.
- 5 Pour the sauce over the pike and serve immediately.
