Boiled Pike With Lemon Egg Sauce

Ingredients

  • 1 large pike, cleaned and scaled
  • 1 cup white wine
  • 1 cup water
  • Lemon peel
  • 1 handful salt
  • Fried bread bits
  • Melted butter
  • 2 slices lemon
  • 3 egg yolks
  • Grated nutmeg

Method

  1. 1 Wash, clean, and scale the pike, then cut it into three pieces.
  2. 2 Boil white wine, water, and lemon peel. Add the pike and a handful of salt, then boil until cooked through.
  3. 3 Place the cooked pike on sippets and garnish with bits of fried bread.
  4. 4 Melt butter, add lemon slices, egg yolks, and grated nutmeg to create the sauce.
  5. 5 Pour the sauce over the pike and serve immediately.
