Boiled Orange Peel Marmalade
Ingredients
- 12 oranges
- 4 lemons
- Sugar equal in weight to the orange pulp mixture
Method
- 1 Peel four oranges and boil the peels until tender enough to pierce with a wisp. Peel the remaining eight oranges, separating into sections, removing seeds and pith, then chopping into small pieces.
- 2 Grate the yellow rind of two lemons and squeeze the juice from all four lemons. Add the lemon juice and rind to the chopped orange pulp.
- 3 Remove the white pith from the boiled orange peels, then shred the yellow peel finely. Add this to the mixture and weigh the total pulp.
- 4 Add an equal weight of sugar to the pulp. Boil the mixture for 10 minutes, then add the sugar and boil for 30 minutes, stirring constantly to prevent burning.
