Boiled Orange Frosting

Ingredients

  • 1 cup sugar
  • ¼ cup water
  • 2 egg yolks
  • Few gratings orange rind
  • ½ tablespoon orange juice

Method

  1. 1 Combine sugar and water in a saucepan. Stir until dissolved, then bring to a boil. Do not stir after boiling.
  2. 2 Wash down saucepan sides with a wet pastry brush to prevent crystallization. Cook until syrup spins a 4-inch thread.
  3. 3 Pour hot syrup slowly onto beaten egg yolks, beating constantly until thick and lemon-colored.
  4. 4 Stir in orange rind and juice. Beat until mixture holds its shape, then spread on cake.
