Boiled Orange Frosting
Ingredients
- 1 cup sugar
- ¼ cup water
- 2 egg yolks
- Few gratings orange rind
- ½ tablespoon orange juice
Method
- 1 Combine sugar and water in a saucepan. Stir until dissolved, then bring to a boil. Do not stir after boiling.
- 2 Wash down saucepan sides with a wet pastry brush to prevent crystallization. Cook until syrup spins a 4-inch thread.
- 3 Pour hot syrup slowly onto beaten egg yolks, beating constantly until thick and lemon-colored.
- 4 Stir in orange rind and juice. Beat until mixture holds its shape, then spread on cake.
