Boiled Mullet With Red Wine Sauce

Ingredients

  • 2 whole mullet
  • Salt and water for boiling
  • 1 pint red wine
  • 2 onions, sliced
  • Nutmeg
  • Salt
  • Vinegar
  • Beaten mace
  • 1 bunch sweet herbs
  • Juice of 1 lemon
  • 2-3 anchovies
  • Shrimps or oysters (optional)

Method

  1. 1 Boil the mullet in salted water until cooked through.
  2. 2 Remove the fish and pour off most of the cooking water.
  3. 3 Add red wine, sliced onions, nutmeg, salt, vinegar, mace, sweet herbs, lemon juice, and anchovies to the pot.
  4. 4 Simmer the sauce well, then return the fish to the pot to heat through.
  5. 5 Transfer fish to a serving dish and strain the hot sauce over it. Add shrimps or oysters if desired.
