Boiled Mullet With Red Wine Sauce
Ingredients
- 2 whole mullet
- Salt and water for boiling
- 1 pint red wine
- 2 onions, sliced
- Nutmeg
- Salt
- Vinegar
- Beaten mace
- 1 bunch sweet herbs
- Juice of 1 lemon
- 2-3 anchovies
- Shrimps or oysters (optional)
Method
- 1 Boil the mullet in salted water until cooked through.
- 2 Remove the fish and pour off most of the cooking water.
- 3 Add red wine, sliced onions, nutmeg, salt, vinegar, mace, sweet herbs, lemon juice, and anchovies to the pot.
- 4 Simmer the sauce well, then return the fish to the pot to heat through.
- 5 Transfer fish to a serving dish and strain the hot sauce over it. Add shrimps or oysters if desired.
