Boiled Mixed Berry Pudding
Ingredients
- 2 eggs
- 1 cup milk
- 3 teaspoons baking powder
- flour (as needed to make a stiff batter)
- fruit (cherries, whortleberries, strawberries, or raspberries)
Method
- 1 Beat two eggs in a bowl.
- 2 Add 1 cup milk, 3 teaspoons baking powder, and enough flour to create a stiff batter.
- 3 Stir in fruit until the batter can hold no more.
- 4 Pour the mixture into a pudding mold large enough to allow for expansion.
- 5 Boil the pudding for one hour.
- 6 Serve with plain pudding sauce, Sabayon, or fruit sauce.
