Boiled Milk Yellow Corn Meal Pudding
Ingredients
- 1 pint boiling milk
- 4 heaping tablespoons yellow corn meal
- 1 heaping teaspoon butter
- 1 heaping teaspoon sugar
- Salt to taste
- 3 egg yolks
- 3 egg whites
Method
- 1 Pour boiling milk over corn meal, butter, sugar, and salt. Stir well.
- 2 Beat egg yolks to a cream and stir into the batter.
- 3 Beat egg whites to stiff peaks and gently fold into the mixture.
- 4 Pour into a buttered pudding dish and bake for 25-30 minutes.
- 5 Serve immediately in the dish.
