Boiled Milk Yellow Corn Meal Pudding

Ingredients

  • 1 pint boiling milk
  • 4 heaping tablespoons yellow corn meal
  • 1 heaping teaspoon butter
  • 1 heaping teaspoon sugar
  • Salt to taste
  • 3 egg yolks
  • 3 egg whites

Method

  1. 1 Pour boiling milk over corn meal, butter, sugar, and salt. Stir well.
  2. 2 Beat egg yolks to a cream and stir into the batter.
  3. 3 Beat egg whites to stiff peaks and gently fold into the mixture.
  4. 4 Pour into a buttered pudding dish and bake for 25-30 minutes.
  5. 5 Serve immediately in the dish.
