Boiled Lobster Newburg With Sherry
Ingredients
- 1 boiled lobster, meat removed
- 1 tbsp butter
- 1 tsp salt
- dash cayenne or paprika
- ¼ cup sherry or Madeira
- 3 egg yolks, beaten
- ½ cup cream
Method
- 1 Place lobster meat in a chafing dish with butter, salt, and cayenne. Stir lightly for 3 minutes until heated.
- 2 Add sherry or Madeira and cook for 3 more minutes.
- 3 Stir in beaten egg yolks diluted with cream. Cook for 1 minute until set, stirring constantly to prevent curdling.
- 4 Serve immediately.
