Boiled Lobster Newburg With Sherry

Ingredients

  • 1 boiled lobster, meat removed
  • 1 tbsp butter
  • 1 tsp salt
  • dash cayenne or paprika
  • ¼ cup sherry or Madeira
  • 3 egg yolks, beaten
  • ½ cup cream

Method

  1. 1 Place lobster meat in a chafing dish with butter, salt, and cayenne. Stir lightly for 3 minutes until heated.
  2. 2 Add sherry or Madeira and cook for 3 more minutes.
  3. 3 Stir in beaten egg yolks diluted with cream. Cook for 1 minute until set, stirring constantly to prevent curdling.
  4. 4 Serve immediately.
