Boiled Lemon Pudding With Breadcrumbs

Ingredients

  • 2 large lemons, thinly peeled
  • 1 penny roll (approx. 1 cup breadcrumbs)
  • 4 eggs, separated
  • 1/2 pint milk
  • 1/4 lb sugar

Method

  1. 1 Peel lemons thinly and boil in three changes of water until tender. Mash into a paste.
  2. 2 Beat eggs. Mix in lemon paste, breadcrumbs, milk, and sugar until well combined.
  3. 3 Pour mixture into a well-buttered basin. Boil for 30 minutes.
