Boiled Lemon Pudding With Breadcrumbs
Ingredients
- 2 large lemons, thinly peeled
- 1 penny roll (approx. 1 cup breadcrumbs)
- 4 eggs, separated
- 1/2 pint milk
- 1/4 lb sugar
Method
- 1 Peel lemons thinly and boil in three changes of water until tender. Mash into a paste.
- 2 Beat eggs. Mix in lemon paste, breadcrumbs, milk, and sugar until well combined.
- 3 Pour mixture into a well-buttered basin. Boil for 30 minutes.
