Boiled Haricot Beans With Parsley
Ingredients
- 1 quart white haricot beans
- 3 quarts cold water
- 1 tablespoon butter or grease
- Salt and pepper to taste
- Chopped parsley
Method
- 1 Soak beans in plenty of cold water overnight.
- 2 Drain soaking water. Place beans in a pot with 3 quarts cold water, butter, salt, and pepper.
- 3 Boil gently for about 2 hours until thoroughly done.
- 4 Drain beans free of excess moisture.
- 5 Return to saucepan with chopped parsley, butter, salt, and pepper. Stir over heat for 5 minutes and serve.
