Boiled Haricot Beans With Parsley

Ingredients

  • 1 quart white haricot beans
  • 3 quarts cold water
  • 1 tablespoon butter or grease
  • Salt and pepper to taste
  • Chopped parsley

Method

  1. 1 Soak beans in plenty of cold water overnight.
  2. 2 Drain soaking water. Place beans in a pot with 3 quarts cold water, butter, salt, and pepper.
  3. 3 Boil gently for about 2 hours until thoroughly done.
  4. 4 Drain beans free of excess moisture.
  5. 5 Return to saucepan with chopped parsley, butter, salt, and pepper. Stir over heat for 5 minutes and serve.
