Boiled Greens With Drawn Butter And Eggs
Ingredients
- bacon
- cabbage sprouts
- spinach
- salt
- water
- drawn butter
- hard-boiled eggs
- wild mustard
- poke
- lambs-quarter
- butter
- salaeratus (optional)
Method
- 1 Boil bacon in a pot of water.
- 2 Skim the pot and add cabbage sprouts, boiling until stalks are tender.
- 3 Boil spinach in salted water for a few minutes.
- 4 Tie poke in bunches, pour boiling water over it, let stand, then pour off water.
- 5 Boil poke with salt and optional salaeratus until tender.
- 6 Dress all greens with butter and serve with drawn butter or hard-boiled eggs.
