Boiled Green Peas With Butter
Ingredients
- 1 peck young green peas
- 1 gallon water
- 1 tablespoon salt
- Butter (optional, for tossing)
- Melted butter (for serving)
- Fresh mint sprigs (optional)
Method
- 1 Shell the peas immediately before cooking. Separate large and small peas into different batches as they require different cooking times.
- 2 Bring a gallon of water to a boil in a saucepan. Add the peas and 1 tablespoon of salt.
- 3 Skim the surface and boil rapidly for 20-30 minutes, depending on size. Taste a pea to ensure it is cooked through but not mushy.
- 4 Drain the peas thoroughly. If desired, toss them with small bits of butter in a covered dish to coat evenly.
- 5 Serve plain or with melted butter on the side. Optionally, boil mint sprigs separately to garnish.
