Boiled Green Pea Pudding
Ingredients
- 1½ cups dried green peas
- 1 teaspoon salt
- Salt and pepper to taste
- 2 eggs, well-beaten
- Flour for dusting
- Butter for serving
Method
- 1 Soak 1½ cups dried green peas overnight in water.
- 2 Simmer peas in fresh water with 1 teaspoon salt until very tender. Drain and rub through a sieve until smooth. Let cool.
- 3 Season the pea puree with salt and pepper. Mix in 2 well-beaten eggs.
- 4 Turn mixture into a floured pudding cloth. Tie securely and boil in salted water for 1 hour.
- 5 Remove pudding, turn out onto a hot dish, and serve with butter.
