Boiled Green Pea Pudding

Ingredients

  • 1½ cups dried green peas
  • 1 teaspoon salt
  • Salt and pepper to taste
  • 2 eggs, well-beaten
  • Flour for dusting
  • Butter for serving

Method

  1. 1 Soak 1½ cups dried green peas overnight in water.
  2. 2 Simmer peas in fresh water with 1 teaspoon salt until very tender. Drain and rub through a sieve until smooth. Let cool.
  3. 3 Season the pea puree with salt and pepper. Mix in 2 well-beaten eggs.
  4. 4 Turn mixture into a floured pudding cloth. Tie securely and boil in salted water for 1 hour.
  5. 5 Remove pudding, turn out onto a hot dish, and serve with butter.
