Boiled Ginger Prune Pudding

  • 1 qt milk
  • 6 eggs
  • Salt to taste
  • 1 tsp ground ginger
  • 1 lb prunes
  • Melted butter for serving

Method

  1. 1 Mix flour and milk in a large bowl. Add eggs, salt, and ginger.
  2. 2 Beat the mixture vigorously until it forms a fine, stiff batter.
  3. 3 Fold in the prunes until evenly distributed throughout the batter.
  4. 4 Place the batter in a pudding cloth and tie securely.
  5. 5 Boil the pudding in water for 1 hour and 30 minutes.
  6. 6 Serve hot, pouring melted butter over the top.
