Boiled French Bread
Ingredients
- 1 cake compressed yeast
- 1/2 cup lukewarm water
- flour
- 1/2 cup salted water
Method
- 1 Soften yeast in 1/2 cup lukewarm water. Stir in enough flour to make a very stiff dough.
- 2 Knead well, shape into a ball, and make two cuts on top about 1/4 inch deep.
- 3 Place in a pan of tepid water until the dough swells and floats.
- 4 Transfer to a bowl with 1/2 cup salted water. Stir in enough flour to make a stiff dough.
- 5 Let rise in a 68-70°F environment until light.
- 6 Shape into a loaf, let rise again, and bake.
