Boiled French Bread

Ingredients

  • 1 cake compressed yeast
  • 1/2 cup lukewarm water
  • flour
  • 1/2 cup salted water

Method

  1. 1 Soften yeast in 1/2 cup lukewarm water. Stir in enough flour to make a very stiff dough.
  2. 2 Knead well, shape into a ball, and make two cuts on top about 1/4 inch deep.
  3. 3 Place in a pan of tepid water until the dough swells and floats.
  4. 4 Transfer to a bowl with 1/2 cup salted water. Stir in enough flour to make a stiff dough.
  5. 5 Let rise in a 68-70°F environment until light.
  6. 6 Shape into a loaf, let rise again, and bake.
