Method

  1. 1 Wash and clean the flounders, cutting the black side similarly to turbot.
  2. 2 Place flounders in a fish kettle with plenty of cold water and a handful of salt.
  3. 3 Bring to a boil, skim clean, then let stand by the fire for five minutes before serving.
