Boiled Cranberry Swirl Dumplings

  • 2 cups cranberries, finely chopped
  • ½ cup seedless raisins
  • 1 cup brown sugar
  • 1½ cups flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 3 tablespoons shortening
  • ½ cup cold water
  • Sweetened cranberry sauce, for serving

Method

  1. 1 Chop cranberries finely and mix with raisins and brown sugar.
  2. 2 Combine flour, salt, and baking powder. Rub in shortening, then add cold water to form a stiff dough.
  3. 3 Roll dough to ¼-inch thickness, spread cranberry mixture over top, and roll up like a jelly roll.
  4. 4 Wrap dumpling in a pudding cloth and boil in water for 40 minutes. Drain and slice into inch-wide pieces.
