Boiled Cranberry Swirl Dumplings
Ingredients
- 2 cups cranberries, finely chopped
- ½ cup seedless raisins
- 1 cup brown sugar
- 1½ cups flour
- ½ teaspoon salt
- 1 teaspoon baking powder
- 3 tablespoons shortening
- ½ cup cold water
- Sweetened cranberry sauce, for serving
Method
- 1 Chop cranberries finely and mix with raisins and brown sugar.
- 2 Combine flour, salt, and baking powder. Rub in shortening, then add cold water to form a stiff dough.
- 3 Roll dough to ¼-inch thickness, spread cranberry mixture over top, and roll up like a jelly roll.
- 4 Wrap dumpling in a pudding cloth and boil in water for 40 minutes. Drain and slice into inch-wide pieces.
- 5 Serve slices with sweetened cranberry sauce.
