Boiled Cornmeal Pudding

Ingredients

  • 3 quarts water
  • 1 cup cornmeal
  • Salt to taste
  • Additional cornmeal as needed
  • Milk, molasses, butter, and sugar for serving

Method

  1. 1 Boil 3 quarts of water in a large pot.
  2. 2 Mix 1 cup of cornmeal with cold water until thin enough to pour easily.
  3. 3 Pour the cornmeal mixture into the boiling water while stirring constantly with a wooden spoon.
  4. 4 Add salt to taste and continue stirring, adding more cornmeal if needed to thicken.
  5. 5 Boil for about 1 hour, stirring frequently, until thick.
  6. 6 Serve hot with milk, molasses, butter, or sugar.
