Boiled Cornmeal Pancakes
Ingredients
- 2 cups flour
- ½ cup corn meal
- 1½ tablespoons baking powder
- 1½ teaspoons salt
- 1/3 cup sugar
- 1½ cups boiling water
- 1¼ cups milk
- 1 egg
- 2 tablespoons melted butter
Method
- 1 Add corn meal to boiling water and boil for five minutes.
- 2 Turn the mixture into a bowl and let it cool slightly.
- 3 Mix and sift the flour, baking powder, salt, and sugar together.
- 4 Stir the dry ingredients, beaten egg, milk, and melted butter into the corn meal mixture.
- 5 Cook on a hot griddle like standard pancakes until golden brown.
