  • codfish, boiled and picked fine
  • boiled potatoes, mashed
  • milk
  • butter
  • 1 egg, lightly beaten
  • salt and pepper to taste
  • flour for rolling

Method

  1. 1 Boil codfish, changing water once to reduce saltiness. Pick the hot fish very fine by hand.
  2. 2 Mash hot boiled potatoes thoroughly until creamy, mixing in milk and a generous lump of butter.
  3. 3 Combine 3 cups mashed potatoes with 1.5 cups flaked fish. Stir in the beaten egg and season to taste.
  4. 4 Beat the mixture well until light, then mold into small balls, handling gently.
  5. 5 Roll the balls in flour and fry in smoking hot fat until golden brown.
