Boiled Coconut Candy Bars

Ingredients

  • 14 lbs white sugar
  • 6 large coconuts, peeled and sliced
  • 3 pints water

Method

  1. 1 Peel the brown skin from the coconuts with a sharp knife, wash, and cut into thin slices.
  2. 2 Melt the sugar in the water and boil to 250°F (soft-ball stage). Add the sliced nuts and keep boiling while stirring well.
  3. 3 Remove from heat and stir continuously with a spatula until the mixture turns an opaque white.
  4. 4 Turn the batch onto a slab or frame covered with paper. Mark into bars while still pliable, then break into pieces once set hard.
