Boiled Chocolate Fudge Icing
Ingredients
- 4 ounces Baker's chocolate
- 1 ¾ cups sugar
- 1 cup water
Method
- 1 Melt the chocolate in a dry pan over heat.
- 2 Boil the sugar and water together until the mixture threads when dropped from a spoon.
- 3 Slowly pour the hot sugar syrup onto the melted chocolate while stirring constantly.
- 4 Use immediately for dipping éclairs, small cakes, or layer cakes.
