Boiled Chocolate Fudge Icing

Ingredients

  • 4 ounces Baker's chocolate
  • 1 ¾ cups sugar
  • 1 cup water

Method

  1. 1 Melt the chocolate in a dry pan over heat.
  2. 2 Boil the sugar and water together until the mixture threads when dropped from a spoon.
  3. 3 Slowly pour the hot sugar syrup onto the melted chocolate while stirring constantly.
  4. 4 Use immediately for dipping éclairs, small cakes, or layer cakes.
