Boiled Chocolate Almond Pudding
Ingredients
- 1/2 cup butter
- 6 egg yolks
- 1/4 lb fine sweet chocolate, grated
- 1 cup almonds, blanched and chopped
- 6 tbsp granulated sugar
- 1 tbsp citron, finely cut
- 6 egg whites
- whipped cream, for serving
Method
- 1 Beat butter until creamy. Stir in egg yolks one at a time.
- 2 Mix in grated chocolate, chopped almonds, sugar, and citron.
- 3 Whip egg whites to stiff peaks and gently fold into the chocolate mixture.
- 4 Pour into a mold and boil for 45 minutes.
- 5 Serve hot with whipped cream or a fine sauce.
