Boiled Chocolate Almond Pudding

Ingredients

  • 1/2 cup butter
  • 6 egg yolks
  • 1/4 lb fine sweet chocolate, grated
  • 1 cup almonds, blanched and chopped
  • 6 tbsp granulated sugar
  • 1 tbsp citron, finely cut
  • 6 egg whites
  • whipped cream, for serving

Method

  1. 1 Beat butter until creamy. Stir in egg yolks one at a time.
  2. 2 Mix in grated chocolate, chopped almonds, sugar, and citron.
  3. 3 Whip egg whites to stiff peaks and gently fold into the chocolate mixture.
  4. 4 Pour into a mold and boil for 45 minutes.
  5. 5 Serve hot with whipped cream or a fine sauce.
