Boiled Bread Dumplings
Ingredients
- stale bread, soaked in cold water and squeezed dry
- 2 tablespoons milk per pint of bread
- 1 well-beaten egg per pint of bread
- 2 tablespoons melted butter per pint of bread
- ½ teaspoon salt per pint of bread
- ½ teaspoon sugar per pint of bread
- flour, as needed
Method
- 1 Soak stale bread in cold water for 15 minutes, then squeeze it as dry as possible.
- 2 To each pint of bread, add 2 tablespoons milk, 1 beaten egg, 2 tablespoons melted butter, ½ teaspoon salt, and ½ teaspoon sugar.
- 3 Add sufficient flour to make a mixture that holds together when dropped into boiling water.
- 4 Bring a pot of slightly salted water to a hard boil.
- 5 Test the consistency with a spoonful, then drop spoonfuls of the mixture into the water.
- 6 Cook for 5 minutes, then lift out with a skimmer and keep hot until serving.
