Boiled Bacon, Cabbage, And Root Vegetable Soup
Ingredients
- 1 piece bacon
- 2 split cabbages
- 2 carrots, split
- 2 parsnips, split
- Peppercorns
- 12 peeled potatoes
- Crusts or thin slices of bread (for soup)
Method
- 1 Place bacon in a large pot with water. Bring to a boil and skim well.
- 2 Add split cabbages, carrots, parsnips, and peppercorns. Boil gently for 1.5 hours.
- 3 Add peeled potatoes and cook until tender.
- 4 Remove bacon and vegetables. Place on a serving dish and garnish with the vegetables.
- 5 Add bread crusts to the cooking liquid to make a soup, then serve.
