Boiled Apple And Raisin Bread Pudding
Ingredients
- 1 day-old French roll
- 1/2 pint boiling milk
- 1/4 lb sultanas
- 1/4 lb currants
- 3 oz sugar
- 4 chopped apples
- 1 tsp chopped lemon peel
- 3 egg yolks
- 1/4 tsp grated nutmeg
- 1/2 tsp lemon zest
- 3 egg whites
Method
- 1 Soak the French roll in boiling milk for 1 hour.
- 2 Stir in sultanas, currants, sugar, chopped apples, lemon peel, nutmeg, lemon zest, and egg yolks.
- 3 Gently fold in egg whites whisked to stiff peaks.
- 4 Pour into a greased mold and boil for 2 hours.
- 5 Serve warm with a sweet sauce.
