Boiled Apple And Raisin Bread Pudding

Ingredients

  • 1 day-old French roll
  • 1/2 pint boiling milk
  • 1/4 lb sultanas
  • 1/4 lb currants
  • 3 oz sugar
  • 4 chopped apples
  • 1 tsp chopped lemon peel
  • 3 egg yolks
  • 1/4 tsp grated nutmeg
  • 1/2 tsp lemon zest
  • 3 egg whites

Method

  1. 1 Soak the French roll in boiling milk for 1 hour.
  2. 2 Stir in sultanas, currants, sugar, chopped apples, lemon peel, nutmeg, lemon zest, and egg yolks.
  3. 3 Gently fold in egg whites whisked to stiff peaks.
  4. 4 Pour into a greased mold and boil for 2 hours.
  5. 5 Serve warm with a sweet sauce.
