Blueberry Tea Cakes
Ingredients
- 2 cups flour
- 1 pinch salt
- 2 tsp baking powder
- 1 tbsp butter
- 1 egg yolk
- ½ cup sugar
- 1 cup milk
- 1 egg white
- 1 cup blueberries
- 1 tbsp flour (for dredging blueberries)
Method
- 1 Sift 2 cups flour with a pinch of salt and 2 tsp baking powder.
- 2 Work 1 tbsp butter into the flour mixture.
- 3 Add 1 beaten egg yolk mixed with ½ cup sugar and 1 cup milk.
- 4 Fold in 1 stiffly beaten egg white and 1 cup flour-dredged blueberries.
- 5 Bake in muffin pans for 30 minutes.
