Blueberry Tea Cakes

Ingredients

  • 2 cups flour
  • 1 pinch salt
  • 2 tsp baking powder
  • 1 tbsp butter
  • 1 egg yolk
  • ½ cup sugar
  • 1 cup milk
  • 1 egg white
  • 1 cup blueberries
  • 1 tbsp flour (for dredging blueberries)

Method

  1. 1 Sift 2 cups flour with a pinch of salt and 2 tsp baking powder.
  2. 2 Work 1 tbsp butter into the flour mixture.
  3. 3 Add 1 beaten egg yolk mixed with ½ cup sugar and 1 cup milk.
  4. 4 Fold in 1 stiffly beaten egg white and 1 cup flour-dredged blueberries.
  5. 5 Bake in muffin pans for 30 minutes.
