Blueberry Steamed Pudding With Sauce
Ingredients
- 2 cups flour
- 1 pinch salt
- 2 heaping tsp cream of tartar
- 1 tsp baking soda
- 1 pint blueberries
- Milk, as needed
- 1/2 cup butter
- 1 cup sugar
- 2 tsp flour
- 1 cup boiling water
- Nutmeg or vanilla, for flavoring
Method
- 1 Sift together 2 cups flour, a pinch of salt, 2 heaping tsp cream of tartar, and 1 tsp baking soda.
- 2 Add 1 pint blueberries and enough milk to mix into a stiff batter.
- 3 Turn the batter into a buttered mold, cover, and steam for 1 hour and 30 minutes.
- 4 For the sauce, cream 1/2 cup butter with 1 cup sugar and 2 tsp flour. Cook until thick, stirring in 1 cup boiling water. Flavor with nutmeg or vanilla.
- 5 Serve the warm pudding with the sauce.
