Blueberry Muffins
Ingredients
- 1/2 cup vegetable oil
- 1 cup sugar
- 2 eggs
- 1/2 cup low-fat milk
- 1 teaspoon vanilla
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups blueberries (fresh or frozen)
Method
- 1 Preheat oven to 375°F. Grease muffin pans.
- 2 In a large bowl, stir oil and sugar until creamy.
- 3 Add eggs, milk, and vanilla; mix until blended.
- 4 In a medium bowl, whisk flour, baking powder, and salt.
- 5 Add dry ingredients to wet ingredients; stir to combine.
- 6 Fold in blueberries. Fill muffin cups 2/3 full with batter.
- 7 Bake for 25 to 30 minutes.
