  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup low-fat milk
  • 1 teaspoon vanilla
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups blueberries (fresh or frozen)

Method

  1. 1 Preheat oven to 375°F. Grease muffin pans.
  2. 2 In a large bowl, stir oil and sugar until creamy.
  3. 3 Add eggs, milk, and vanilla; mix until blended.
  4. 4 In a medium bowl, whisk flour, baking powder, and salt.
