Blueberry Chicken Pasta Salad
Ingredients
- 1/2 cup fresh blueberries
- 2 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon Dijon mustard
- 2 teaspoons honey
- 1/4 teaspoon salt
- 1 1/2 cups fresh blueberries
- 3 cups cooked whole grain penne pasta, cooled
- 12 ounces cooked chicken breast, sliced
- 4 cups field greens
- 1/2 cup chopped red onion
- 1 medium red bell pepper, chopped
Method
- 1 In a blender, combine 1/2 cup blueberries, olive oil, balsamic vinegar, Dijon mustard, honey, and salt. Blend until smooth to create the vinaigrette.
- 2 In a large bowl, combine the cooled penne pasta, sliced chicken, field greens, chopped red onion, chopped red bell pepper, and remaining 1 1/2 cups blueberries.
- 3 Pour the vinaigrette over the salad ingredients and toss gently until everything is evenly coated. Serve immediately.
