Blueberry Cake
Ingredients
- 1 tablespoon butter
- 1 cup sugar
- 1 egg, unbeaten
- 1 cup milk
- 2 1/2 cups flour
- 3 teaspoons baking powder
- 1 pinch grated nutmeg
- 3 cups blueberries
Method
- 1 Cream 1 tablespoon butter with 1 cup sugar. Add an unbeaten egg and mix thoroughly.
- 2 Add 1 cup milk, then stir in 2 1/2 cups flour sifted with 3 teaspoons baking powder.
- 3 Add a pinch of grated nutmeg and gently fold in 3 cups blueberries.
- 4 Turn batter into buttered pans and bake in a hot oven (425°F) for 35 minutes.
