Blueberry Baked Oatmeal Cups

Ingredients

  • 2 eggs
  • 1 cup dry quick-cooking rolled oats
  • 1 cup 1% milk
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large banana
  • 2 cups fresh or frozen blueberries
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh blueberries, divided
  • 1 tablespoon fat-free plain Greek yogurt
  • lemon zest

Method

  1. 1 Preheat oven to 350°F. Grease four 8-oz ramekins.
  2. 2 Blend eggs, oats, milk, baking powder, and salt until puréed and resembles pancake batter.
  3. 3 Add banana, 2 cups blueberries, honey, and vanilla; pulse until smooth.
  4. 4 Divide mixture among ramekins (filling ¾ full). Top with remaining 1/2 cup blueberries.
  5. 5 Bake on a sheet for 25-30 minutes until golden and puffed. Cool 5 minutes.
  6. 6 Serve with yogurt and lemon zest.
