Blueberry Baked Oatmeal Cups
Ingredients
- 2 eggs
- 1 cup dry quick-cooking rolled oats
- 1 cup 1% milk
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 large banana
- 2 cups fresh or frozen blueberries
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1/2 cup fresh blueberries, divided
- 1 tablespoon fat-free plain Greek yogurt
- lemon zest
Method
- 1 Preheat oven to 350°F. Grease four 8-oz ramekins.
- 2 Blend eggs, oats, milk, baking powder, and salt until puréed and resembles pancake batter.
- 3 Add banana, 2 cups blueberries, honey, and vanilla; pulse until smooth.
- 4 Divide mixture among ramekins (filling ¾ full). Top with remaining 1/2 cup blueberries.
- 5 Bake on a sheet for 25-30 minutes until golden and puffed. Cool 5 minutes.
- 6 Serve with yogurt and lemon zest.
