Blue Royal Icing
Ingredients
- 1 lb powdered sugar, sifted
- 6 egg whites
- A pinch of blue food coloring
- Juice of 1 lemon
Method
- 1 Place the sifted powdered sugar in a grease-free pan.
- 2 Add the egg whites and a pinch of blue food coloring.
- 3 Beat the mixture vigorously for 10 minutes until thick and transparent.
- 4 Squeeze in the lemon juice and continue beating until combined.
- 5 Warm the cake in the oven for 5 minutes to help the icing adhere.
- 6 Spread the icing smoothly over the top and sides of the cake.
