Blue Cheese Celery Sticks With Apricot Pecan Filling
Ingredients
- 2 tablespoons crumbled blue cheese
- 3 tablespoons fat-free cream cheese
- 1/2 cup plain fat-free yogurt
- 4 dried apricots
- 4 dried figs or dates
- 1/4 cup pecans
- 8 celery stalks
Method
- 1 Chop the dried apricots, figs (or dates), and pecans.
- 2 Mix blue cheese, cream cheese, and yogurt with a fork or hand mixer until smooth.
- 3 Stir in the chopped dried fruit and pecans. Refrigerate until ready to serve.
- 4 Slice celery stalks into 3-4 inch sticks and fill with the spread.
