Blackberry Jelly Cake With Whipped Cream

Ingredients

  • 1 qt blackberries
  • 3/4 cup sugar
  • 1 cup water
  • 4 pieces plain loaf or sponge cake
  • Whipped cream

Method

  1. 1 Heat half of the blackberries with the sugar and water until mushy.
  2. 2 Force the mixture through a sieve to extract juice and pulp.
  3. 3 Cut the cake into cubes and place them in a bowl.
  4. 4 Pour the blackberry juice and pulp over the cake cubes.
  5. 5 Press the mixture down firmly with a spoon until solid.
  6. 6 Chill in the refrigerator until cool, then turn out onto a plate.
  7. 7 Garnish with remaining fresh berries and top with whipped cream.
