Blackberry Jelly Cake With Whipped Cream
Ingredients
- 1 qt blackberries
- 3/4 cup sugar
- 1 cup water
- 4 pieces plain loaf or sponge cake
- Whipped cream
Method
- 1 Heat half of the blackberries with the sugar and water until mushy.
- 2 Force the mixture through a sieve to extract juice and pulp.
- 3 Cut the cake into cubes and place them in a bowl.
- 4 Pour the blackberry juice and pulp over the cake cubes.
- 5 Press the mixture down firmly with a spoon until solid.
- 6 Chill in the refrigerator until cool, then turn out onto a plate.
- 7 Garnish with remaining fresh berries and top with whipped cream.
